I began to run more and more. Eventually I was running 100 miles a month. My first full year of running I ran over 1,000 miles. Since that time I have averaged 1,300 miles a year and now in my late 40's, am in the best shape of my life. As I began to feel better and look healthier, I wanted more. I was fascinated by how much of an impact food played in energy levels, running performance, and other areas of life. I became very interested in learning as much as I could. I started watching documentary films relating to food and nutrition. Documentaries like Forks over Knives, Hungry for a Change, Fat Sick & Nearly Dead, Fed Up, Cowspiracy and many others.

 

I also began reading books about people who were truly inspirational both personally and athletically. Books like Finding Ultra by Rich Roll telling an incredible transformational story about a man who went from battling alcoholism to becoming a world-class ultra endurance athlete. Attributing much of his success to his newly found plant- based diet. Books like Eat to Live by Dr. Joel Fuhrman, The China Study by Dr. T. Colin Campbell of Cornell University, and many others (see Powerful Resources page).

What I began to discover was very alarming. The standard American diet (SAD) has literally lead us to a point where we have the highest obesity and chronic disease rates in American history. What is also concerning is we are exporting these bad eating habits to other parts of the world. More and more countries are seeing increases in obesity and chronic disease as a result. I discovered that most of us (I was in this camp as well) have absolutely no idea what we are putting in our bodies when we consume food. In particular, processed food, fast food, and food that appears healthy on the outside, but may have hidden toxic ingredients on the inside. Ingredients the food industry does not want you to know about. I also became aware of the incredible abundance of chemicals, man-made additives, and GMOs that have entered our food sources. What disturbed me the most was the impact this was having on children, as they are constantly marketed sugar-laden cereal and other food products that have almost zero nutritional value.

This passion to discover the truth led me to Dr. T. Colin Campbell and the Cornell University plant-based nutrition program. Having recently completed Dr. Campbell's program at Cornell, I discovered the incredible link between degenerative diseases and diet. We really do have so much more control over our health and ability to prevent chronic diseases than most people realize, simply by being mindful about what we put on our fork. 

My vision for FoodSwell is to create a platform that disseminates information from thought-leaders in one central location. Experts in nutritional science, functional medicine, lifestyle medicine, wellness, and elite athletes who are incorporating plant-based nutrition to achieve amazing results.

The goal is to empower you on your journey to living a life of optimal health, without having to search everywhere to find information about food and nutrition. Information that can transform how you and your loved ones feel, and have a profound impact on your overall health and quality of life.
